Extra Veggie Fried Rice

This was a super easy and quick meal! Really delicious as well. Sometimes trying to eat more vegetables is hard and not always that appetizing, so when I find something that tastes as good as this meal did you can bet its going to end up on the dinner plate quite a bit.

I prepared the veggies ahead of time. Chopping them all quite small so they cook up fairly quickly. Plus easier for the kids to eat. I used carrots, broccoli, green pepper, onion, water chestnuts, snow peas, snap peas and corn. Add whatever kind of veggies you have on hand or whats in season. I also prepared some extra chicken the day before and added that as well.  I cooked up a premium long grain rice according to the package. You could make a brown rice to make it healthier, this is just what I had on hand.   While that was boiling I heated up a large skillet and added some extra virgin olive oil. Add in the veggies and stir fry for about 8-10 minutes or until tender crisp. I added in maybe about a half cup chicken broth that needed to be used and maybe a quarter cup of low sodium soy sauce. Add in the rice to the skillet and enjoy! A quick and yummy meal in no time.

The best part is you can have a lot of the time consuming work done ahead of time. Chop up the veggies and store in a container. If you cook chicken earlier in the week for a different meal just add a few more pieces and save it for this dish. Then all you would need to do is cook up the rice and stir fry the veggies, and in about just 20 minutes you have a healthy meal you can be proud of 🙂
